JOANS CHILI SAUCE


THIS RECIPE IS SOMETHING THAT GRANDMA JOAN USED TO MAKE ALL THE TIME AND WE ALL LOVED IT. SO WITH A LOT OF EXTRA TOMATOES ON HAND I DECIDED IT HAD BEEN A LONG TIME SINCE WE HAD HAD ANY AND THAT IT SOUNDED REALLY GOOD.
BY THE WAY, DON'T START THIS AT 5:30 AT NIGHT LIKE I DID IF YOU WANT TO GET TO BED AT A DECENT HOUR.

4 QUARTS TOMATOES, SCALDED, PEELED AND CUT UP
1/2 CUP GREEN PEPPER CHOPPED VERY FINE IN FOOD PROCESSOR
1/2 CUP RED PEPPER CHOPPED VERY FINE IN FOOD PROCESSOR
3 CUP ONION CHOPPED VERY FINE IN FOOD PROCESSOR
4 CUP SUGAR
1/4 CUP OR LESS OF SALT
PUT THE FOLLOWING IN SEVERAL LAYERS OF CHEESE CLOTH AND SIMMER IN TOMATOES
3 TSP CINNAMON
3 TSP GROUND CLOVES
3 TSP NUTMEG
2 TSP GINGER
SIMMER DOWN TILL THICKENED ABOUT 3 HOURS
ADD 3 CUPS VINEGAR
SIMMER DOWN ANOTHER 15 MINUTES.
TASTE AND CHECK THICKENESS, YOU MAY WANT TO SIMMER DOWN A LITTLE LONGER.
PROCESS IN WATER BATH 30 MINUTES.
MAKES APPROX 6 PINTS
