TURKEY PROVOLONE PESTO SANDWICH MELT

The name of this sandwich is sounds good, but does not measure up to the yummy goodness of this sandwich.  In my book this recipe is a keeper and one that guests will love.  I have found that the pesto mayo is also becoming a favorite of mine on any sandwich.  If you like pesto you will love this.

Costco Turkey Provolone Pesto Sandwich Melt
Time: 15 minutes
Yield: 5 sandwiches
Recipe idea from Costco
From jamiecooksitup.blogspot.com

5 square sandwich rolls (Torta or Cabaccia rolls)
1/2 C pesto
1/3 C mayonnaise (I used Best Foods Light)
1 pound sliced turkey breast
1 large tomato
1/2 red onion
5 slices provolone cheese
Find yourself some nice Torta or Cabbacia rolls. Slice each roll in half and lay them out on a large cookie sheet you have lined with tin foil.
In a small bowl combine 1/2 cup pesto and 1/3 cup mayonnaise.
Spread the pesto/mayo mixture over both sides of each roll.
Thinly slice 1 tomato and about half of a red onion.
Layer the tomato and red onion over half of the rolls. Lay the turkey out over the other half of the rolls.
Cover the tomatoes and onions with a nice big slice of provolone cheese
Bake these beauties in the oven at 400 degrees for about 10 minutes or until the cheese has melted. Turn the oven to broil, and let the cheese get nice and golden brown. Be careful here, you don't want to scorch the heck out of them, which can happen quickly, so keep a close eye, won't you?
Put each of the sandwich halves together... AND ENJOY!!!

Ham and Cheese Sliders

Kathy sent me this recipe after Thanksgiving to try with some of the leftover ham we had. They were sooo yummy! Brandon was in heaven and insists that we have them again soon. I was a little worried about the mustard in the recipe because neither Brandon or I are big fans, but it was really good and not too mustard-y. They were great as leftovers too! The recipe comes from the blog The Girl who Ate Everything.

Ham and Cheese Sliders
adapted slightly from the Recipe Club

24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce (you probably could half this...I had plenty extra)
1 Tablespoon poppy seeds
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.
