These muffins are great to have on hand in the fridge, for those morning when you really don't have much time for breakfast! I like to warm them in the microwave for 15 seconds!
Spiced Pumpkin Nut Muffins
Combine dry ingredients:
1 2/3 C. flour
1/4 tsp. baking powder
1 1/2 C. sugar
1/2 tsp. cinnamon
1 C. chopped nuts (I like walnuts)
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. cloves
1/2 tsp. nutmeg
Combine wet ingredients:
1/2 C. water
2 eggs
1/2 C. oil
1 C. pumpkin
Mix wet and dry ingredients. Either spray or line muffin tins. Bake at 350 degrees for about 20 min (depending on oven). Makes approximately 16 muffins
