STUFFED PEPPERS

THIS IS AN OLD FAMILY RECIPE THAT I REMEMBER EATING AS A KID USING THE FRESH BELL PEPPERS GROWN IN OUR FAMILY GARDEN.  MOST PEOPLE DON'T LIKE TO EAT THE PEPPER, BUT IF COOKED LONG ENOUGH THEY ARE SO GOOD ESPECIALLY  IF YOU MIX EVERYTHING TOGETHER AND POUR ON THE SAUCE. IF I REMEMBER, THIS WAS ONE OF MY DADS FAVORITE.

6 GREEN PEPPERS
1 LB. GROUND BEEF
1 1/4 TSP SALT
1 EGG
1 ONION CHOPPED FINE
1/2 CUP RICE  ( I USE MINUTE RICE. IT ELIMINATES THE CHANCE OF UNDER COOKED RICE)
1 CAN TOMATO SOUP PLUS 1 CAN WATER
1/4 TSP PEPPER
1/2 CUP MILK
WASH AND PREPARE PEPPERS.  COMBINE GROUND BEEF, SALT, PEPPER, EGG, MILK, ONION AND RICE.  STUFF PEPPERS WITH MIXTURE.  PLACE IN HEAVEY SAUCE PAN.  COVER WITH SOUP AND COOK TILL DONE.  DO NOT TRY TO HURRY THIS BECAUSE YOU MAY FIND THE PEPPERS SCALDING ON THE BOTTOM OF THE PAN.  I LIKE TO OCCASIONALLY SPOON THE SAUCE OVER THE PEPPERS WHILE COOKING TO KEEP THEM MOIST.  SERVE WITH THE EXTRA SOUP.  ENJOY
