EASY CHICKEN VERDE ENCHILADAS


INGREDIENTS
1 small shredded rotisserie chicken
2 cup(s) shredded mozzarella cheese
1 pkg. flour tortillas
1 medium diced onion
1 can(s) green enchilada sauce

Method

  1. Shred the chicken and cheese, and finely dice the onion.
  2. Pour a small amount of sauce into a casserole dish (just enough to cover).
  3. Take each tortilla and layer a little bit of onion, chicken, and cheese. Roll the tortilla up and place in casserole dish.
  4. Pour remaining sauce over completed pan of enchiladas, sprinkle with small amount of cheese.
  5. Bake at 350 for 25-30 minutes.
