INGREDIENTS
1 small shredded rotisserie chicken
2 cup(s) shredded mozzarella cheese
1 pkg. flour tortillas 1 medium diced onion
1 can(s) green enchilada sauce
Method
- Shred the chicken and cheese, and finely dice the onion.
- Pour a small amount of sauce into a casserole dish (just enough to cover).
- Take each tortilla and layer a little bit of onion, chicken, and cheese. Roll the tortilla up and place in casserole dish.
- Pour remaining sauce over completed pan of enchiladas, sprinkle with small amount of cheese.
- Bake at 350 for 25-30 minutes.
