FAST AND EASY WEEKNIGHT JAMBALAYA

I found this recipe in the Sunday paper and decided to try it and it is really good and a very easy weeknight meal with just a little kick.
1 pouch Uncle Ben's ready rice original long grain
1 link Johnsonville andouille cooking sausage, sliced
2 Tblsp vegetable oil
1 small onion, diced
1/2 green bell pepper, diced
1 rib celery, diced
1 Tblsp. cajun seasoning
2 cloves garlic, minced
1 14oz can chopped tomatoes, drained
Heat oil in a large saute' pan.  Add onion, pepper, celery, and cajun seasoning and saute' untill onions are soft and brown.  While veggies are cooking, heat Uncle Ben's rice in micorwave according to package instructions.
Add garlic and sausage to veggies and sook until sausage has browned.
Add rice and canned tomatoes.  Cook until heated thoroughly and mix until all ingredients are combined.

My variations:  I did not use the Johnsonville sausage, I used a sundried tomato chicken sausage that I had and I used two links since they were smaller in size.  I  also I only had tomatoe chunks which I felt were to big so I pulsed them in the blender for just a second.  I also think that you can use regular rice if you have time or  leftovers, the Uncle Ben's is nice and handy if you are in a hurry.
